Food Safety Modernization Act Study

Commercial bakeries must be concerned about a wide range of food safety considerations, including foodborne illnesses, allergen control, shelf stability, and sanitation programs. With the help of Reading Thermal, you will achieve food safety, and your products will bake to perfection.

The heat transfer experts at Reading Thermal,  located in Sinking Spring, Pennsylvania, have studied and measured the commercial baking process for nearly 25 years.

What is the Food Safety Modernization Act?

The FDA’s Food Safety Modernization Act (FSMA), signed into law by President Barack Obama on January 4, 2011, was the most sweeping reform of U.S. food safety laws in over 70 years. It empowered the FDA to regulate how foods are grown, harvested, and processed.

Instead of merely reacting to reports of foodborne illness after it has already occurred, the focus of the law is to prevent food safety issues in the American food supply more effectively.

Advantages of Validating a Kill Step:

  • It helps meet safety regulations set by regulatory agencies.
  • It is the only way to prove that a process consistently delivers the desired lethal effect to ensure the destruction of pathogens such as Salmonella, Listeria, and E. coli.
  • It helps achieve maximum food safety.
  • It helps protect consumers and reinforces consumer confidence.
  • It saves the food industry millions by avoiding recalls and legal penalties caused by foodborne illness outbreaks.
  • It supports business success.

How to Comply with FSMA

The SCORPION® 2 Temperature Sensor Array measures temperature at the product level, in fixed positions across the conveyor, and accurately represents what your product experiences over time. Different pluggable sensors are available, including one for solid or tight mesh conveyors and one for open mesh conveyors.

Once connected to the SCORPION® 2 Data Logger, the sensor array travels through the oven with the product, providing a precise picture of temperature from side to side and end to end.

After gathering data, the SCORPION® Software (SV8) Food Safety Module simplifies the lethality calculation and generates a comprehensive report that displays cumulative log reduction. By combining this measurement simplicity with vigorous data capture, the SCORPION® 2 System makes it easy to optimize your process while meeting food safety standards.

To comply with FSMA Kill Step Validation regulations, you may be using a tool that measures and documents temperatures inside the oven, one that only measures temperatures. Accomplish more by connecting a variety of Reading Thermal pluggable sensors and sensor arrays to measure other baking parameters that affect product quality.

A significant advantage of investing in the SCORPION® 2 System is that you can add smart sensors to explore more oven variables than just temperature that affect the quality of your products, earning exceptional value from your investment.
